Crusader kings 3 is very grueling but satisfying once you're able to attain a competence in the game. Managing your royal family is quite addicting so much drama and cool tales emanate from the nobles everyday happenings. I saw a poster mention ck2 since it's free as a starting point, which is a solid suggestion as there's mods that allow you play in Westeros, maybe that would appeal to you since you're into fantasy games.
