I had loads of sloes left over last year so put some in with the blackberries. I can't remember how much sugar I used, probably less than the recipe says, as you don't want it too sweet unless you're aiming for a liqueur. You can always add more sugar, as you taste every month or solove to try that, or similar, do you have a recipe, or a link you can share?
This is what I use for sloe gin, but the damson gin is also fantastic.

You can flavour spirits with virtually anything that takes your fancy. Also you can add herbs/spices - I've used cinnamon sticks (not really impressed, and nutmegs, which were not bad at all.
