You did not include that it was also a French influenced Vietnamese food, I added this to emphasise how un American it is.

It comes from the Arabic word al-bāḏinjān, apparently.

"Eggplant" originally only applied to white cultivars, which did actually look like eggs.

4.Pioneer Woman

I wistfully enjoy the latter as I one day hope to nab me a piece of southern hospitality cooking wifey.
