I guess we're setting up to simply crowd our defensive third completely to the point no one can move in the hope that that stifles their attack, then launch the ball out to the wings at every opportunity .

It could work. If Arsenal are daft enough to leave space for Walcott and Bolasie to exploit, it probably will. It could also backfire horribly. If it does, this will be up there with the worst 90 mins we'll see all season with Arsenal basically passing at will while we embarrass ourselves in trying to build attacks with that front 3.
