The drive up to and back from Colorado we do exemplifies this...periods of 40+ miles of literal nothingness in the 4-corners/Navajo Nation area.
Dad once went to lobby the Texas state legislature to remove open container laws.

One legislator said to him, "Look, I have a lot of constituents between here and El Paso, and there's not much to do."

Do not ask what a North Carolina state legislator once said to me when we went to lobby for tougher drunk driving laws, because RAFUH will have an aneurysm.
 
Been too Austin twice, the brother lived there for a few years. 6th street was lively and it had more characters hanging around when you get past the bars in dirty 6th but had no issues.

Few places dowtown i would recommend are:
Terry Blacks for bbq (Also Salt Lick but i didn't get to try there)
Home Slice pizza on South Congress
Torchys for some tacos(Aware there is probably better food trucks)
3 forks steakhouse

And head to Rainey streets for a few drinks, i enjoyed Bangers, lots of choice.

Bangers Austin Texas? Solid. My favorites in that city are Blacks BBQ (not Terry Blacks, although I hear that’s good also) and Fixe which is $$$ but <chefs kiss>.

Also Mort Subite on Congress but that’s a difficult stop after Bangers.
We’re going to try Blacks before we leave, going to San Antonio tomorrow and ACL festival Saturday.

I didn't try Blacks but can vouch for Terry Blacks. Anyone that we met out there recommended it as the best (Well between that and Salt Lick) i wouldn't go to Austin without a visit there and trying a plate of the different meats.

The brisket, prime rib, pork rib and jalapeno and cheese sausages are all a must and one tray would do to share and you will probably leave with a box (The brisket i took back to the apartment was still moist the next day even though it was in the fridge). The creamed corn as a side is amazing and the banana pudding for dessert is a must have.

I've been to San Antonio twice...feel it gets overlooked due to Austin, but is an absolutely great city with an excellent food scene. Can't remember specific places but very much remember always eating well there (avoid the tourist-trap restaurants on the river walk, for the most part).

I was in San Antonio on my 21st birthday. Spent it on the River Walk. I don’t remember much after the second “naked iguana” drink, but I didn’t end up in the river so overall good times.

Just filled my fat neck in Terry Blacks, all good stuff but we overdid the sides . Diet starts on Tuesday when I get home.
