I dont think this is just fitness. He hasn't completed all night. In fact we are a far worse side with him right now. If Gray is fit on Sunday then he shouldn't play.

Well, "match fitness" is about general sharpness. Touch is related to that, involves reflexes (physical, and mental sharpness). Your first touch is often affected by not playing but you shouldn't lose it completely.
