Spurs are narrow favourites at 6/4 at two sites that I've seen - Everton 7/4. In America it's Spurs 1/2 and Everton 7/1 according to ESPN

Gotta be worth a bet for you US Evertonians if you can actually get those odds.

I'm not sure which book that is but my US based book has us +175 which is 7/4

It's more fun than challenging. I've got software for the boring bit - filling the grid with words - but once the rules and etiquette of clue writing was established the rest came naturally. I must have written over 2000 original clues by now.
