Weirdly though, I've just gone to do an online custom game and the squads hadn't been updated, yet if I go on seasons mode or something else then the winter update is in. Confused here.

For some reason the winter update doesn't apply to online friendlies. I had a great little left back ready to use who just disappeared resulting in me having to settle for Dosenna ffs.
