Early kick off would be awful, everyone's just got out of bed, the sun's in your eyes, it's a footnote on TV as they turn their attention straight to the next game etc. I'd much prefer a monday night to be honest, not sure why people have suddenly taken against that idea.

because the day should be an absolute festival of goodison, so if it's a monday night ko at 7.45, most wont be able to get there till 6 earliest, maybe 6.30-7, and then many will have to get off not long after or take it easy with work in the morning, kids will have school etc

i imagine the standard fixture for that day will be 3pm as it's essentially a saturday with the fa cup final being saturday, so I imagine it will actually be more liek a 5pm or 5.30 ko if there's other fixtures going on at 3

It would be 2, 4 or 4 30 on the Sunday, that's Sky's TV slot. They aren't going to go out of their way to create a special slot just for us. I don't have any major issue with it being on the Sunday, I just don't on the Monday either.
