I mean I guess theres a grey area there, but it seemed to me the defender was clearly intentionally playing the ball to clear it off the onside attacker and Griezeman was not offside Im confused a bit on that one.

We've seen goals like that given for years: a player in an offside position not touching the ball is deemed as not interfering with play and is then in an onside position to score his goal. Van Nistelrooy was a master of it.
It's not that the goal could not be given as offside, it's the sheer inconsistency of the application now with VAR that grates with me.
