I second this (As a serious reply this time)

Went to Gran Canaria myself a couple of years back and it was great. It's got a bit of everything there. Nice beaches, fun nightlife without 'too many' obnoxious Brits, old buildings and some stunning countryside once you venture inland and a bit higher in altitude. Las Palmas is great if you love the old buildings (The Cathederal is amazing) and a trip up to the top of Pico de la Neves is a must-see:


Similarly, Fuerteventura. Lots of resorts, good restaurants and beaches. Wasn't too pricey when I last went there.

We went to Corfu a few years ago with 3 similar age kids. They just loved playing in the pool and going to Greek bars in the afternoon and the weather was perfect. Hired a 30cc boat and went along the coast a bit. Sea was warm good time of year to go.

The resorty places might feel a bit deserted like Blackpool in November but warmer. Lovely old town as well in Corfu town.

Going to corfu last week of August, not been for 20 years, really looking forward to it, Messonghi Beach area.
 
Been to Ibiza and Mallorca in October and weather has been decent. Good deals on nice hotels as it's winding down for the season.
 
haven’t been abroad since before the pandemic, but I might start saving up to go somewhere next year

Would love to go hiking in somewhere like Switzerland or Austria

If you stay in Zurich there are apparently good hiking opportunities about an hour away and you’re also only 90 minutes away from Lichtenstein, which I’d love to visit just for the novelty
