Winning the Coppa Italia and the SuperCoppa Italiana for the first time in 24 years with Napoli, going further in Europe than any of his predecessors for 25 years, no one has still got further than Rafael in Europe for Napoli. Created an immense squad and built the foundations which they are still benefiting from today.
Made Newcastle an established Premier league side. Won the championship etc etc
I'm really sorry but most of the above is just stretching what he has done to lunacy. And I say this as someone who has defended his record at Napoli to Evertonians.
Chelsea finished outside of the top 4 under him for the 1st time under Abramovich. Chelsea fan's hated the style of football and had completely turned on him. The Europa league, for a club of Chelsea's ambitions at that point was a real consolation prize and carries little weight.
He did a good job at Napoli, but again some balance is needed here. The season before he arrived Mazzari got them to 2nd with the same points total. After he left Sarri took them to 2nd with a record points total, and Ancelotti took them to 2nd place as well. Benitez finished 3rd and 5th in his time (with the same points as Mazzari got to be fair in his 1st season) but as you say did well in Europe and won a cup. However I would say you would be pushing it to say Benitez laid the foundations for success as he was by no means the 1st manager, nor the best performing manager at the club. What he was, was part of a continuum of good managerial performance and he had some USP's in his favour, however objectively it was really Sarri who is the standout of the 4 managers mentioned. It's worth noting at Napoli, he spent the 2nd most gross and the most net in the league in his time there. So he was heavily backed.
With Newcastle, again I'm really not sure how he made them an established side. He took over a team who had they won their game in hand would have been 2 points clear of the relegation zone, and got them relegated from that position. Then got them promoted, then did a job where they flirted with relegation but avoided it, very much like Bruce has done. I think he did ok at Newcastle all things considered, but again it's not a roaring success.
Aside from these jobs, there are also inglorious failures at Real Madrid and Inter Milan to go alongside the failure at Chelsea.
It's a mixed record. I actually don't mind what happened at Madrid, Inter and Chelsea that much as they are probably the 3 biggest clubs he has managed. He is not that well set up for that level of management, but if you go a step down Valencia, Liverpool (when he joined), Napoli and now potentially Everton there is a bit of a sweet spot where he has had some decent success overall.
I don't know how much hunger he has. It seems China was a disaster, but he did ok at Newcastle. The football he plays is normally pretty awful (a big part of why he's failed at big clubs IMO) but I really don't mind how we play as long as it's successful. But come on mate, lets have some balance in how we are evaluating him, both negatively and positively.
