The gold doesn't oxidise, thereby creating less resistance at the contact and therefore more of the signal gets through. Its the 2nd best conductor (silver is the best, but it oxidises do you have to keep it clean). Plus the lack of any oxide layer means there is no capacitance, which might filter out some volume to certain frequencies, if it is there.
That's science. Measurable, data driven, repeatable, peer reviewed science. On some system you can hear the subtle differences caused by different conductors, on others you can't. They're oversold for their affects though - because people like to collect money and others like to believe they're buying "special".
