This mad woman I work with suggested mixing melted butter with honey on top of toast or crumpets and then topping with brie cheese.

Partially toast the bread enough to melt the butter, then back under the grill to melt the cheese.
Heard it works well with other creamy cheeses as well like gouda, which would probably grill better now that I think about it.

Just choked down a roast beef and pastrami pitta bread. Like trying to swallow and keep down a hornets nest. Strewth!
