I’ve done this recipe, people come from all over for Nestor’s tortilla in San Sebastián.
Basically fry thinly sliced potatoes, onions and green peppers.
Then add them to the raw egg mix before returning to the pan.

Some people like it without onion but it's defo better with onion imo.
I suppose I should say I don't usually eat eggs in any form for breakfast. Any other time of the day or night and I'm all over them. In any form.
