Like many, we haven't been on hols for years and as we have two dogs who are sihtbags, kennels is out of the question. Mrs S has suggested getting a caravan. Towing is no problem, (I have a class 1HGV and a car more than capable of towing) storing it is no issue, and we camped/stayed I'm my truck when I raced so we know what we are getting into there, but I know nothing about caravans. We may look to spend 5-10k, will that get something big enough and good enough? What to avoid/look for?

Think you need to spend a fair few quid for a decent one mate.

Don’t buy a static one though. Cost a fortune and the site fees are mental. Proper tory also.
