Spare a thought on Christmas Day for all the people who can't cook Turkey properly.

There's enough guidance out there and they've had a year to prepare.

No sympathy from me.

I like to bring in caterers and specialist chefs for my Christmas Dinner. Its great one time of the year I let loose and release them from my dungeon and let them cook for me in my own private kitchen. I give them a tour of the castle afterwards as a way if thanking them and then lock them all up for another year.

I like to make my own parsnips and sprouts though.

Turkey, Ham, Spud both mash and roast, carrots/parsnip mashed together, mushy peas, gravy, stuffing and cranberry ...

I've waxed away since 6 yesterday prepping, flaying my own fingers, had it all laid out about 4 hours ago and I get told we normally have mushy peas despite me never remembering them mushy little tits passing my lips on a roast, never mind a Xmas dinner.

My Ma always had them with Christmas Dinner so I've kept it up, I think they are great with it.

Nearly empty plate, mushy peas, gravy left, time for a piece of bread and real butter to clean the plate with. So long as there's still a little heat left to help melt the butter. Chef does like clean plates. It's just the simple things, I find beef gravy for this task is my favourite. I think.
