I've used one once and did my balls.

The button is there to release the handbrake.
The ratchet click click click is so you...a) dont over tension the cable and render the hand brake useless in a short time and b) To stop it coming off

Been doing it for 35 years and never wore a handbrake out yet.
I got a huge bollocking on my first ever driving lesson for not pressing the button and it's just become habit. The sound of the ratchet really grates on me.
I did Google it though and you right. Can't see myself changing now.
