Mexican food is its own world, and is as complex, varied and rewarding as French food. I don't know Colombian food that well in detail - we see more Venezuelan influences around here because there are so many more expats these days, and everything merges into the "Caribbean" or "Cuban" slots we 'Muricans understand when it comes to what's on the menu, as opposed to what's available (these are two different things, btw - much more is usually available than what you see on the menu, if you ask nicely).

For the best authentic stuff, follow the sheetrock guys and see where they get lunch. Honest.

Do arepas qualify as more a Venezuelan than a Columbian staple? Either way, they are addictive. We have a local Peruvian place that got me hooked on Huacatay.
I love Colombian food too but it is time taking and elaborate so I let my mom cook it more often than I cook it lol

Arepas are a staple on Colombian cuisine as much as Venezuelan. It is as popular as bread. We make arepas of corn, sweet corn, and rice. They can be eaten plain or stuffed with cheese or meats. I agree they ar addictive and truly delicious. I usually make some for my daughter every weekend because she loves them with a cup of hot Colombian chocolate.

Will be making a lemon curd cake tomorrow. This is the easiest recipe ever for making the curd ; I like it sweet and sour so only use 200g of sugar, you could use even less.

I used to make it the traditional way, it's just much quicker in the microwave. In the end I made a chocolate Victoria sandwich cake with a lemon curd filling and lemon curd chocolate icing. It's delicious. :)
Next time I'll either make a lime curd or orange curd which should go great with a chocolate cake.

Two pieces of sponge cake with a filling and, if you wish, icing on top. Traditionally it's a normal sponge with a filling of whipped cream and strawberry (or your choice) jam.

My chocolate gubbins.

@verreauxi that pizza looks delicious. I made have to invest in a pizza steel and some other kitchen items for my birthday. Our daughter loves pizza so it will be a worthy investment.

Btw, I finally got to make the Chinese crispy belly pork and it was truly delicious and super simple to make. It just takes time. Here some pics.

Holy holy!!! That looks delicious. Nice job Sassy!

(why did you mark my pizza post as sad?)

I can't imagine how much a marble slab would weigh...probably break my oven rack.
Haha, yeah, our old range was fine, our current one flexes too much with cast iron + cassoulet!

Built a clay oven, so don't need the marble, although the oven has a big slate slab at the entrance.

Ever tried pizza on a Weber? Not too shabby.
