How much do you have to spend on a watch that gains value over time?
A lot or get lucky.

If you’re thinking of flipping quickly for a profit, or slightly longer then a quick trawl of a second hand luxury watch website will show you what is going up in price (Rolex, Patek Philippe, Audmer Piguets, usual suspects of brands and models). I think we're in a bubble and it will pop or deflate soon enough - probably not something to look to make money in unless you buy something super cheap compared to market prices.
 

I don’t know much about that aspect, but I’m envious—-some of my favorite watches are German, so you have some great local options. When I lived in Germany, I was completely skint!?
Which are the main German brands? I know there is a local brand in Frankfurt that's quite popular. Seen watches in there between 1-10K. They look ace but could never justify it to myself paying that much for a watch. But if I could convince myself it's an investment then that might change lol

Very few watches will ever make you any money... There's millions of people trying to make money on watches.

Nomos are really nice. Sinn and Damasko as well.
You might want to check out Laco. You can get some quality ones well under 1000

Junkers and Zeppelin both produce watches. Nice looking pieces and reasonably priced.

I have a couple of Junkers, cost between £150 to £250, very reliable, but face glass is prone to scratching.

Most watches are really poor investments. The only watches that consistently go up in value (some or a lot) are Rolex. Patek Philippe, A. Lange & Sohne (as of recent), and Cartier also do well. But otherwise, watches are like cars, the moment you purchase a new one, you'd be lucky to recoup 60% of its value if you resold it "like new" the next day.

Sinn make amazing watches.

The "high end" and major (lots of manufacturing capabilities) German brands are traditionally seen as A. Lange & Sohne (by a wide wide margin), then Glashutte Original.

Some smaller independent ones are Moritz Grossman, Lang & Heyne, then there are tons of really good companies that are smaller but have great reputations, Sinn and Nomos being standouts (Damasko also is moving upward).

Then stuff like Junkers, Laco, Limes, Tutima, Archimede, Jughans, Muhle Glashutte, Chronoswiss, UTS, Stowa, Dornbluth and Sohn, etc.

Of all of the above, only A. Lange & Sohne would likely go up in value after purchase.
