By complete accident, I discovered the perfect roast potato.

Forget all the pre boil, goose fat nonsense. Buy one or two normal baking potatoes, the massive ones. Dont peel them, cut into sizes you fancy, put on a baking tray, covered in vegetable oil, middle of the oven, and take them out when turning golden. 1/2 hour ish.

I promise, they are just brilliant.

I have always used baking potato's for roasting. I peel them, cut them to size, then put them in with the joint.
 

Marinated 2 chicken breasts in a smoky bbq mix for a couple of hours, just wrapped them in smokey bacon, got some sliced potato fritters, dry fried mushrooms(for Mrs k) , deep fried onion rings , some peas and a hot bbq sauce. Looking forward to dinner tonight
