I have always used baking potato's for roasting. I peel them, cut them to size, then put them in with the joint.By complete accident, I discovered the perfect roast potato.
Forget all the pre boil, goose fat nonsense. Buy one or two normal baking potatoes, the massive ones. Dont peel them, cut into sizes you fancy, put on a baking tray, covered in vegetable oil, middle of the oven, and take them out when turning golden. 1/2 hour ish.
I promise, they are just brilliant.
