There are a handful of exchanges that you could trust. Wash trading & scam wicks are commonplace. Crypto is not about having to trust middlemen though, so no need to use an exchange other than to on/off ramp. Not your keys not your coins.

DeFi solutions exist if you want to trade without an exchange and have been around for some time, you don't need to use an exchange where you will get liquidated on a scam wick

Blockchain by definition is a PUBLIC ledger, it is not some magical traceless internet money that you seem to think it is. It is far easier to trace than actual physical cash.
