I couldn't really say why, but a carrot doesn't seem the most obvious choice to me. I guess they are cheap and full of Vitamin A.

Exactly. Courgettes could be used as part of the training. Aubergines though, sounds dangerous but when you consider what can be squeezed out of there, perhaps not.
