I think a year ago I would have agreed with you but ive changed my opinion a bit. Who do the likes of Liverpool, Spurs, Arsenal and United have who fulfills this role for them?
I'd argue that the top sides don't have a player who does this as their only role.
Kante and Fernandinho are probably the closest, but they are both miles and miles better with the ball than Gueye. And Fernandinho in particular can play as the number 6/pivot in a 433.

He benefits hugely from the fact McCarthy and Baningime have been injured and Schneiderlin is so poor. When he doesn’t play we effectively have no DM and usually Davies is preferred over those other options. When our flimsy 4231 with no holding mid gets opened up all of the ‘see look what happens when Gueye is out’. That doesn’t mean though that we can’t upgrade massively on him and get in a defensive mid who can distribute the ball well as well. If he is sold this would be a hugely positive indicator for Brands and Silva in my eyes after the signing of Gomes. We won’t do anything until we get proper footballing midfielders in the middle and Gueye is in my view a decent defensive athletic midfielder but nothing more.

Maybe not right now but we have been linked with him and others. Personally I'd keep Gana and add another midfielder. But 45 million is worth considering, if we could replace him with a player who can play at DM and has better passing.
We aint getting 45m, of that I can assure you. But if we are selling him, we should upgrade rather than downgrade and this Barrios isnt even an upgrade on Tom Davies.
As long as he can pass a ball I think he very much will be.
I like Gueye but he's overrated by so many, same as McCarthy. It's a massive blind spot for Evertonians and has been for years. We find players who run around relentlessly tackling people as endearing even if they can't do F all else.

True, I would see Barrios as more of a squad player initially. For me what we really need is a box to box Doucoure type who can do both jobs, destroy and push us forward, we are also crying out for some height, pressence and leadership in the midfield.
Because I like midfielders who can pass?
Yes I didn't say that we should replace him with somebody equally poor on the ball though did I? So Fernandinho and Kante are very relevant examples. Who do Liverpool have? Is that a joke? ALL of their midfielders do it, that's why they're so good, because their midfield doesn't give you a second, hassling and winning the ball back all over the pitch, pinning teams back. I would argue that the fact United and Arsenal don't have players like that is one of the main reasons why they are the poor relations of the top 6, and often find themselves overrun in midfield by the better sides. Matic used to be great but now seems to really struggle to compete with the athleticism and speed of his rivals.
Also worth pointing out that I was specifically talking about what we need in order to play the style of football Silva appears to favour (high press, high energy, committing lots of players forward) not that every single team in the world needs that type of player, regardless of style.
We aren't a top side though and have proved when we try to go toe-to-toe with the big boys without Gana, we're hopeless.
Imagine not being an upgrade on Tom Davies though, poor lad.
He needs to consider retirement.
