Made it in the Thermomix, but it’s easily adaptable:

So you’ll need to chop/blitz the ginger finely, and then add to a large saucepan with the butter and sugars/syrup before heating gently to melt everything. Stir through your oats and Bob’s your uncle.

I used a small, deep baking tin so ended up baking for about 40 mins.
Nice, I'm going to have a go at making some next month when I get my shopping, I've been wanting to for ages, ginger ones sound really nice.
 

The snow is starting to fall more heavily so it seems the next couple of days I will be relaxing at home, too bad I’m going through dry January otherwise today would be the perfect day to have some warm Baileys cocktails, but at least we are persevering with our no alcohol goal for the month.

View attachment 152034Had a great night reminiscing the old days last night. Everybody was passing around old photos they had on their phone. Somebody brought out a photo of some Speke lads we all knew taken with Duncan McKenzie in Rotterdam 1985. I didn't realise what it was at first but when it sunk in I knew that I was with them. That's me I exclaimed. Second left on the top. No way haha. I was that pissed I don't even remember it being taken.

That is really a very very special photo to me. Always said that day was my second best day out ever after my wedding day. And Dunc was my hero.

Can't help feeling Cal pulled a blinder there. I didn't even know that picture existed. And it looks like I'm wearing an Everton hat. I've never owned an Everton hat in my life ?

The snow is indeed beautiful but so cold ? Hot chocolate is exactly what I’m making right now (the Colombian kind) that along with baking some croissants so when my girl wakes up she can enjoy something warm before going out playing with the snow.

Do you ever get snow where you live?

I can practically smell those croissants!

Yeah we get snow but it never normally lies for too long. Three years ago was our heaviest ever snowfall when it was up to knee level in places but nothing remotely like it since.

Here in Asheville we used to get a lot more snow a decade ago, now days we may get one or two during the winter season, before last year we went for two years without it. The effects of climate change are real :(

I don’t love it as much as some of you but I do love the joy my daughter and other kids get with it, so that makes up for the coldness.

Same here, it usually doesn’t last long because it doesn’t stay cold enough, I’m sure by Wednesday, if not sooner, all will be melted.

Yeah, Ireland will end up with an even milder and wetter climate. Something to look forward to- damp summers! ?
 
Took the family into the bright lights of our nearest town today. Kitted the lads out with some new footy gear and the eldest with new everyday trainers because he’s shooting up like a weed.

New running trainers for me, and even treated the motor to a cheeky little car wash on the way home.

Pork shoulder just gone in the oven.

Today is a good day. Hope it’s turning out well for the rest of the Mascoteers.

The first time I ever went in a hot tub with my now wife was in the middle of a huge blizzard. One of the coolest things I’ve ever experienced.

Fair play to you. Dry January would be very hard to keep up in those conditions!!
