I'm having a fish day tomorrow. Smoked mackerel salad for lunch and lightly battered haddock with chips, peas and tartare sauce for tea. You have to make the effort don't you.

Still haven't heard anything from T Anj. It's over a week since he logged onto the site. Hope he's OK.

Weather's not been great here and forecast isn't good for the weekend either. But the sun came out about 2 hours ago and it's nice sat out in the back even though the temperature is only 14C. Just about to pour myself a nice summer fruit cider which I'll have with some ice and a squeeze of fresh lime.

Hope you all have a great Easter holiday folks. t least there's no Everton to spoil it for us. ;)
I know Fred. I'm a bit worried about him. Hopefully he's on some marathon gaming session! Your afternoon sounds very nice - sitting in the back garden with a cider. I might do a bit of that myself over the weekend. The forecast looks reasonable.

I'm also liking your menu for tomorrow. I think we'll be having prawn salad for lunch and then salmon and mash for tea.
 
Hello everybody. Lovely day here. I've done the shopping, bought daughter's Easter gift - she requested 2 bags of compost for her ever expanding vegetable plantings. Son got a more traditional Easter egg when he came here a couple of weeks ago. Taking a leaf ( see what I did there lol ) out of @roydo's book, I also bought some bedding plants and made a couple of hanging baskets. A very nice morning all in all.

Haven't got any plans for Easter. This time of year always reminds me of my late Mum. I could guarantee that every Good Friday she would ring me and after some fairly trivial conversation would casually throw in "what are you having for tea?" Fish was the only acceptable answer. ? As I've told you before I'm a pretty rubbish Catholic these days but I cannot, and never will be able to eat meat on Good Friday. I genuinely think I would get struck by lightning! It is amazing what sticks with you.
I was brought up in a non religious household but we always had fish on Good Friday. Since going veggie I limit the amount of fish I eat but will keep up the tradition tomorrow.
 

Mackerel is not a fish that I’m very familiar with. How do you prepare your peas? I’ve noticed English people really like peas but I’m still not sure about the mash peas.

Btw, your fried rice pic made me hungry. It look super delicious. When you prepare it you make enough for a couple of days?
No. Just do enough for 1 Sass. I'm always a bit wary of recooking a rice dish a few days later.

The peas I use are frozen garden peas. not that keen on mushy peas personally. Literally all I do is blanch them in hot water twice, once to defrost them and once to warm them up. Mackerel is an oily fish and you can get it in abundance freshly caught locally and is great cooked on a barbie with some marie rose sauce on the side. I like the smoked version which you can get in all UK supermarkets and which I serve simple with fresh tomatoes and spring onions (scallion to you).

I had a prawn cocktail and a salmon salad earlier in the week. Still got a salmon fillet left actually and I may have that rather than the mackerel for lunch. The mackerel is still in it's vacuum sealed packing so will probably last better.
 
Ironically for tomorrow’s day of fast and reflection, it is the first day of NI’s new licensing laws meaning that it is business as usual really. Normally Good Friday pub hours were 5pm to 10pm.

Mad really.
It's Sunday hours here I think, which is closed by 10.30pm . My local is usually closed by 9pm anyway. Not a late night place my village.
 

Mackerel is soooo under rated. The only fish I have eaten that comes close to the flavour is a Red Snapper. And that was in a dead posh restaurant in Cape Town. @Sassy Colombian , remember that salad recipe I sent you? The one with bacon and feta? That is perfect with a grilled/baked/BBQ mackerel.
To really lower the tone, Tesco some great own brand tinned makerel with a chilli sauce on it.

Actually don’t think I have seen mackerel on a menu more than a couple of times which is a shame.

Me neither. Odd isnt it? You would have to pay a kings ransom for a sea bass in a restaurant, and they taste of nothing. But the cheaper fish, like Mackerel, or Sardines, are way tastier.

Grilled sardines on a slice of chibatta, (sic) with some peppery relish, is just lovely.
