Had to get some miniPC's for a thing at work and they were all great. Laptops haven't really tested personally but seeing good reviews.

Happy to see competition in all honesty.

Have had bad experiences with AMD's and I'm still on the fence about GPUs they have, but happy with the CPU for sure/so far.
I am rocking a 6700XT and i love the thing. Sure, when it released it lost out to the 3070 performance wise, but over the 2 years, with the driver updates and the fact it has 12GB VRAM, it has aged exceedingly well, actually moving past the 3070 and scratching the heels of the 3070Ti in the perf charts.

For CPU's I had a 3600, upgraded to a 5600 and am so very happy with it (the 3600 went into one of the kids machines). And for the $ to perf charts, AMD are every bit as good as Intel, but with the x3D chip line, they have also taken the outright performance crown (and all while using significantly less power than the top of the line Intel chips)
 

Don't be afraid to browse AMD - price to performance is much better than i7/i9s imho, and they can save you a few quid. I'm a recent/current gen AMD convert and have had absolutely no issues so far.

Also as @Goat said - more RAM will be what you need.

Ye, very much so. The benchmark @Goat posted a few pages back pretty much sums it up - good performance for less money. Even their highest tiers are a good bit lower than the direct competition from intel, and the "budget" part is imho entirely AMD nowadays.

I have somehow now ended up with two Dell pcs (don't ask).

Which would you keep?

How many Ram slots does the mobo on cpu 1 have? 16gb aint so much these days so you'll end up buying at least another module to take advantage of the quickened ram bus. The first at least appears to be slightly more futureproofed. 60-70 tiles at a time?
