Ed Norton is the best of the current crop. Doesn't get the big roles these days because he's a pain to work with. Legendarily fussy about scripts, has a ton that he has doctored without credit. (Not like he needs the pay.)

Not sure how Ben Kingsley hasn't come up yet, if range is among the criteria. Can play anything from Gandhi to a right nasty piece of work like Behrani in House of Sand and Fog. It would be hard to make Shutter Island work without him.

Can't remember Gene Hackman ever being dull, even if on some level he's always playing Gene Hackman.
 
An up and coming actor with serious talent, in my opinion, is Caleb Landry Jones. Was superb in The Outpost and also Three Billboards. Versatile and just has that believability-charm
 


The late Pete Postlethwaite had some acting chops. A movie list of some note.

Steven Spielberg called Postlethwaite "the best actor in the world", to which Postlethwaite quipped: "I'm sure what Spielberg actually said was, 'The thing about Pete is that he thinks he's the best actor in the world.
Fantastic in anything he was ever in, even when the role was something patently ridiculous like Keyser Soze's attorney. Unfortunate to have his stellar performance as Gerry Conlon's father occur during a stacked year for nominees. The Best Actor contest that year was just as brutal. Legends, the lot of them.
