The gambling thing happens with every club and can be a shock to the system for Americans used to sports which run in fear of even the suggestion of gambling (i.e. they don't often want they players playing poker tournaments in their personal time etc.). In the UK you can usually bet in the stadium while the game is taking place.

Stoke or Villa are ludicrous choices. You will want to spend some time in Manchester, Liverpool or London ... there is cool stuff there to see other than football. It would be like an English person picking the Cleveland Browns -- decent history but you could have a holiday in Florida and watch a team there but instead you're stuck in Cleveland in December?

Everton are a very progressive club: almost 100% of our fans are gay (or at least bi)!

We often chant USA! ... so that's something.
