Have a great trip!
Toronto will try to nudge you into Mill Street Organic. It's a trap! It's just like Bud light/impure-water-not-even-dirty-enough-to-be-offensive, only branded to suit hipsters and yuppies who don't actually like beer.
You can do the Steamwhistle tour, right next to the baseball field, if you like that sort of thing. It's a respectable if unspectacular pilsner. Lots of Ontario craft beer these days. Creemore is good, Muskoka is good if you like strong IPAs, which is all anyone drinks in North America as of 5 years ago. Camerons, Wellington, Neustadt - all decent stuff.

^this place is cozy, close to all the downtown hotels, and has a huge selection
Never heard of a white whale beer, presume it's not a literal description. Tell me more. One of my Paraguayan friends is headed to London later this month. Huge beer fan, brews, runs The Hop, one of my two stomping grounds while in Asuncion, saved me a spot on the bus to Brazil for the Beer Train and a friend of such caliber that after a 2016 Christmas trip to New England, among the haul he brought back in to the PY was a can of Alchemist's Focal Banger which he saved specifically for me. Focal Banger is one of those "white whale" beers that, frankly, lived up to the hype.
SOOOO...
Anyone have any recommendations of craft/micro breweries to visit or beers to try?
Thanks in advance.

I never the know the people who know. You intrigue me ; I presume you either know, or know people who know, or know people who know people who know. Should I emigrate to Paraguay to meet the people who know ? You've moved I think, not that it matters. Anyway, thanks for the oblique description of 'white beer', here's an equally oblique quote, which could define many situations :white whale in the Moby [Poor language removed] sense. One you spend a long time chasing, like Ahab chasing Moby [Poor language removed]. Limited, seasonal releases, often with long lines that sell the beer out before the day is through. those beers you'll never find at the local beer store or supermarket, but will need to know a guy who knows a guy to have a shot at getting.

Maybe "Bucket List" is a better descriptor. A beer that is hard to find and you feel lucky to get your mitts on. Scoring a can is like, well, Hibbo scoring. Riot.
In my amigo's case, it's not that he knew the right guy or whatever, it's that with a limited amount of payload he could bring back in his suitcase, he wanted to share a can of a very, Very rare beer with me.
In any case, he is a very generous friend, so want to repay as best I can. If anyone knows good craft brewery or bar in London, want to be able to point him in that direction.
There is the 'Bermondsey mile' in which there are loads of breweries very close. BBNO, FourPure, Bottle Shop, A and H, Redchurch. Kernel are also there but rarely open their tap room. Recommend getting there fairly early as gets busy.
Beavertown tap room is good but a bit out the way.
Hoplocker, Mother Kelly's, Craft Beer co.
I'll get back to you with some more shortly. There are many good pubs too.
