Started on the probate paperwork yesterday. Ended up spending about 2 hours on it but I broke the back of it and glad I did it now. My background is in finance so I'm quite comfortable with the process. The hardest part was setting up an on line account with Government Gateway. I was walking through St John's Market in Liverpool many years ago. I think I may have been a teenager on a lunch break from my Saturday job in Littlewoods. One of the butcher's stalls had a pile of unidentifiable meat on a tray with a sign "Lamb's goolies. Delicious fried" Didn't really sell it to me then and still wouldn't now!More all our yesterday's mate. When our parents had to eke out the weekly budget.
Mind you I find that what were considered the throw away cheap cuts 40 years ago can be quite expensive these days. Like pork belly, liver, kidneys and ribs.
It's years since I had roast stuffed hearts though.
I believe chicken feet are next up on the popularity list. Can't wait.!!!

I still get cow tongue occasionally. Nice on a sandwich with a really hot local (Cornish) piccalilli... even the wirral had me howling surely its not that bad. Chicken feet and cow tongue next I think.
Don't knock it until you've tried it Joe, even the eyes you can use, buy a couple, pop them in the fridge and they'll see you through the week.
