I don't have a problem with how he's set the team up, to be honest. He's at least got them trying to press properly and supporting each other, which is progress.
If we had any kind of talent up front, it wouldn't be that bad to watch. Not amazing, but there are worse things to watch in football than players competing for loose balls and trying to create chances from the little skirmishes that result. The problem is we don't really have anyone that can play a decisive pass or shoot properly when we get a favourable situation.
With Gray, it's simple: he's not playing because he doesn't really do anything when he hasn't got the ball. If Dyche can get him to work back and press forwards, he'd definitely be an asset, because he's one of the few players in the squad that can actually shoot. Hopefully he has a moment of realisation, like some players do at his age, and embraces that side of the game.
Just as a side note, thinking about it, we are really, really struggling for players that can shoot, aren't we. Maybe Gray, Townsend, McNeil, possibly Garner that can strike a ball properly? That is horrific.
