nice.

Honestly restoration is time and space consuming - I haven't the space currently, sadly, to try, but I want to provided I have in the future. I've done the "front of the house small mods" route on a few of my cars before, it's quite fun and feels great really.

My unasked for advice for this is to pick a car you'll have fun with, a-la "Mighty Car Mods" on YouTube - doesn't need to have 1000000000 bhp or be the super-specific V8 or something - restomod it so it makes you happy.
Even as an engineer mate I'd never consider a restoration, way out of mine and most peoples skill sets, and so bloody costly to get it right. In fact I agree with the addage that it's better to buy one that's been done rather than one that needs doing, far cheaper. Being sensible COYB's shout of cheap Fords/MX5's is good..........something that needs tidying and TLC rather than a full resto. Far more therapeutic and kinder on the cash flow.

To do a full resto, you’ve got to have an army of contacts, as you know, something as small as a grommet or a bolt, that you can’t get hold of, due to them not being made anymore, can completely stop your project dead.

I know lads who’ve bought donor cars / wrecks and pay for storeage, just so they have parts on tap.

True mate.

Dont understand the attraction of old cars.

Lovely to look at, but why on Earth would you buy 1 when boffins have spent the last 30 years improving them.

Crumple zones for the win.
I had a 1982 Mercedes SL until fairly recently.

I've driven Astons and Rolls and Bentley's of the past 10/15 years, but none of them made me grin like the Merc.

I felt like a fat faced Bobby Ewing.
