Fair play to you, that your choice...now extend to them the freedom of choice you just exercised.

Blindly trusting the science can back fire...like Thalidomide...like spraying everything with DDT, (see joni mitchell) these vaccinations were brought out in a hurry, maybe with the exposure to the science they'd have to get to do the job they do, they thought, I'll just wait and see...their choice.

Or is freedom of choice a thing that can be turned on or off, depending on what some politician or worse - what some unelected jobsworth thinks is right or wrong?

It's not freedom of choice it's about being competent at your job. If a builder stopped using a level because he didn't trust it and trusted his eye more, would you let him build your house? The level, and the vaccine, is fine.

But if yous wanna proper retort to Rafuh's misguided trust in scientists, you only have to look at my post only a few further up (to which no-one has offered a rebuke). Scientists including the CDC Director and Dr Fauci Himself spreading dangerous misinformation about the vaccine:

For sure the scientific method has been severely misunderstood by the general public, not helped by a compromised politics & media. Ironically, it's been the 'anti-science'-branded vaccine-sceptical who've been more faithful to the scientific method than anyone else: test, prove, interpret data > repeat until no new trends apparent -> apply scepticism > draw considered conclusion.
